Hank's serves gimmicky steaks; not USDA Prime and they claim the NY Strip is wet aged 28 days, except wet aging over 21 days is considered a negative thing. So I think the marketeer who did the menus know nothing about food and who knows if they are wet aged at all. Technically supermarket meat is wet aged.
